I have never stitched with linen and would like to know if this can be done using regular Aida.

Yes! If you stitch this on 14 count aida, it will be the same size as 28 count.
To find out what it would be on 16 or 18 count aida, just divude the stitch count by the fabric count to see design size. Add 6 inches to the design size for both width and length to see what size fabric you need. I use this for a formula S (stitch count) ÷ F = L or W (length or width). Plus six to each of widthe and length. For purposes of speed and because I just adored lomg division in school (LOL), I remember this by San Francisco (S÷F) or S/F=Design Size W or L, +6.
Hope that I have not confused you.

29 count linen or other fabric equals 14 count aida because 28 count is stitched over two squares, but 14 count aida is stitched over one square.
