azcallaghan -- Are you asking a question or just making a comment. There was a short discussion about this a while ago. I have been "thinking" about making a matzah cover for several years. Started one about 20 years ago but never finished.
Something to think about if you decide to stitch this. I have a bread cover piece of aida that measures 18 x 18 inches and has a little bit of fringe around the sides. Using this, you can cover a standard dinner plate easily.
If you use a larger plate or want to use this a three section cover for the seder table you will need more fabric.
JEWISH CULTURE INFORMATION: We have been taught that when leaving Egypt there wasn't enough time to wait for bread to rise so we ended up taking matzah which looks like a flat cracker.
To make a longer story short. A matzah cover will cover matzah on the table just like a bread cover will cover bread and rolls.
