I think I may have answered my own question here having done some research. I see that there are baby afghans available to do counted cross stitch on. I guess that would be the equivalent of a baby quilt for counted cross stitching.

I have used the afghan material for all of my grandchildren's baby blankets. It comes out really nice. Their moms have put them away so they can have them when they get older as keepsakes.
