what does " black & white symbol pattern mean?
And is this stitched on green aida? Or is the whole thing solid stitching?

On the pattern supply list, the recommend white aida, so the green is stitched. A black and white symbol pattern means the printout of the pattern is white blocks with black symbols in the grid. A color pattern looks more like a pixelated picture with the symbols ontop of the colored box. I hope that makes sense.

Noah is correct that the pattern is 100% stitching (coverall). If you want, you can save stitching by using light gray or green fabric or a dyed/marbleized fabric, which I think would be very pretty. IF you order this lovely pattern don't be surprised that is has a lot of pages. More pages allow for a larger grid making the pattern easier to follow.
