This post isn't about cross stitch it's about canning
It is that time of year for me and I am relatively new to canning. I have only been doing it for about 3 years. I usually do it with my mother but she is getting up there in age and we can't find some of the recipes we used to use for dill pickles, spicy carrots, spaghetti sauce and tomatoes. She put them in a safe place and doesn't remember where, god love that woman 😊. I used to have copies of them but we moved recently and I can't find them either, imagine that...lol Does anybody have any of these recipes they are willing to share? I have looked online but they just don't look right, these were passed down for generations and it kills me that we lost them. I have asked around our little town but nobody will share because we have a little farmers market and they sell them which I understand. If you are willing to share let me know and I will give you my e mail address if not I understand. Thank you😊

I found one for dill pickles (among other pickles!) Here goes...
5/6 cucumbers, about 4" long
1 slice onion or 1 clove garlic
2stalks of dill
1.) Pack washed and dried cucumbers into sterilized jars, add onion (or garlic) and dill

11/2 cups water
1/2 cup pickling vinegar
2 tablespoons salt
2.) Mix water, vinegar, and salt, heat to boiling point. Pour hot mixture over cucumbers and seal immediately with sterilized covers.

I haven't found any others you're looking for. I think my grandmother, and mother used the guess and taste method, I know my mother made a spaghetti sauce, by the gallons, and froze it..but there doesn't seem to be anything written down. Most of their recipes I have are for baked goods, and say things like "lard, the size of an English walnut"

I will look. I know there might be some.

I just made a batch of spaghetti sauce using fresh tomatoes this week, so I can vouch for this recipe. It's on a website wellnessmama, under homemade tomato sauce. It's a favorite in our house.

Thank you so much jaj and su.
Jaj I also have some baking recipes like that where it will say a pinch of salt, a peck of cinnamon or a handful of flour. I think that it is neat how they used to cook like that but I have often wondered how much it is cause my handful can very from theirs and what the heck is a peck...lol

A peck is a half a bushel. I think you meant a pinch of cinnamon maybe??

I know the feeling--loosing treasured recipies-most of which were in the cooks memory--no need/desire to write them down. I have found that the Ball Canning Book is the closet to "old fashioned" canning. My wife also has a collection of older cook books from garage sales or thrift shops that are a God send for us. Hope this helps, willing to share our recipies--for specific items, also look in the local Amish communities as well.

Thank you all for the posts.
Dave I went and bought a Kerr canning book it seems to have some of the recipes I remember. I will take your advice and start looking into garage sales.
We are getting close to the end of fresh veggie season here with our annual pumpkin festival next weekend, I am hoping to still get some veggies there. Wish me luck and thanks again everyone. I love this chat board. 😊

Kudos to you for learning to can, Nettie!
I was a young kid in the single digits when I remember my grandmother canning vegetables and fruits... the rattle of the glass canning jars in the big kettle of boiling water, the cutting of small white cord to be attached to pencils ( grandma would have me tie the end of the cord to the middle of a pencil and as soon as she poured the paraffin wax into the top of a filled glass fruit jar, I would lower the cord in the wax and the pencil would lay across top rim of the jar until the wax hardened, leaving the end of the cord to pull the wax loose when the fruit jar was going to be used later in the year), the smell of fresh-picked blackberries for jam... ahhhh🙂

Hi Nettie !

I found recipes that I feel ate our family best!
Please let me (pittsuze63@yahoo.com) know your email
address.
I don't want to clog up the board with my stuff. I am only on the computer in the evenings.
Best canning tools in my opinion are a jar filling funnel (less spills on outside of jars) and the jar ring wrench.
Hope you like what I have.
