Things are slow lately, Ladies. I am experiencing a distinct feeling of deja vu when it comes to the topics list.

I see the supply list for floss and fabric, but it does not tell me how much of each color to order. How do I figure this out?

In the supply list it will show you how many you need of each color. Most of them have a (1) but there are a handful that suggest (2).

If I order colored thread, how many pieces of thread are in one order.

You are ordering skeins of DMC 6-strand floss. It is continuous length 8.7 yds. You cut in lengths & peel off the number of strands called for by instructions. ECS will have consulted the pattern color list for the # of skeins needed to complete the project. If you change the fabric, you may need more or less floss.
