I would like to do this pattern on linen instead of Aida count 14. Any suggestions to what count linen would be good?

Linen can be a little tricky to work on - some threads can be a little thicker than others. And sometimes it will have slubs (little clumps). Usually everything will work out fine and the finished piece will be wonderfull. I would recommend 28 count linen because then the size will be similar to the 14 count piece because you will use two strands of floss and go over two threads each way. In other words, underneath the X will be four threads -- two from each direction. I'm sure that there are some instructional videos on u-tube if this is confusing to you. You could also use 32 count linen and the finished piece will be a little smaller because there will be 16 stitches to the inch (again 2 over 2).
