Which has the larger holes; 14 count; 16 count or 18 count?
Am I correct in thinking that the larger the number, the smaller the holes?

You are correct the higher the count number the smaller the finished piece.
14 ct aida has 14 squares per inch -- therefore there are fewer squares than 18 ct aida. Since there are fewer squares the finished work with the exact same number of stitches will be larger on a higher ct fabric.

I can't use the smaller sizes because I can't see the holes. I have to use the bigger count material. I usually use 14 as my standard go to.
