ECS is just the seller of these patterns and kits so they post the sizes that are given on the instruction or direction sheet. The stitcher can then adjust their sewing preference as they see fit. There are too many different ways that a project can be done for ECS to put them all on a drop down link.

Actually, this information is available on this site as long as you know how to access it. If you're looking at the product, there is a fabric size calculator to the left of the product picture & info. You enter in the stitch count and then the count of fabric you wish to use and Voila, the design size is there as well as the fabric size allowing for the borders.
