Porcupine Meat Balls
Someone on here mentioned that their DH liked Porcupine Meat Balls. Does anyone have the recipe? Thanks. Pam

Pam...porcupine meat balls.....ground beef, cooked rice, celery salt, minced onion, pepper formed into small balls and served in a tomato sauce. Haven't had them for years. Enjoy...Diane

That might have been me....I just add rice (but I use uncooked) to my meat ball recipe, (if I had a recipe I would share it, I just kind of wing it) I just do ground chuck, an egg, rice, salt, pepper, and garlic. Mix it up, and cook them in spaghetti sauce. They will “expand” some when the rice cooks. Now I want meat balls...

I've made this recipe many times over the years. It's from the Sunbeam Portable Electric Cookery, copyright 1970 by Sunbeam Corp., Chicago, IL. It's on pay 41.

1 1/2 lbs. ground beef, 1/2 cup uncooked rice, 1 Tbsp. minced onion, 1/2 tsp. Allspice, 1 tsp. salt, 1/4 tsp. pepper, 1 can (10 1/2 oz.) condensed tomato soup, 1/2 cup water.

Combine ground beef, rice, onion, Allspice, salt and pepper. Blend lightly, but thoroughly. Shape into small balls, about 1 1/2 " in diameter. Combine tomato soup and 1/2 cup water in fry pan. Bring to a boil. Drop meatballs into liquid. Lower heat to simmer and cover. Cook gently about 2 hours. During cooking time, stir occasionally and add more water if needed.

6 servings.

I've also made this in a frying pan on the stove when I don't want to wait two hours for it to cook. I hope this is what you are looking for. Diana
